This sweet and simple salad is dairy free, gluten free, and perfect for a light meal or as a side, it’s healthy and delicious!

Serves 2-3
• 2 large ripe mangos, peeled and diced
• 1 ripe avocado, pitted and diced
• 1/4 cup chopped or crushed walnuts
• 1/4 cup chopped fresh mint
• 1 tablespoon hemp seeds
• Your favourite salad leaves
Dressing
• Juice from 1 whole lemon
• 2 tablespoons Pure Bea Olive Oil
• 2 tablespoons honey
• 1/8 tsp salt (or to taste)
• 1/8 tsp pepper
1. To make the dressing, whisk together or blend the Pure Bea Olive Oil, lemon juice, honey, and salt and pepper.
2. In a large bowl add the diced mango, diced avocado, walnuts, mint, hemp seeds & your favourite salad leaves.
3. Drizzle with the dressing and toss everything to combine.
4. Divide between 2-3 plates.
5. Optional: Serve with grilled chicken breast or baked salmon and goat cheese or dairy free feta cheese!
